Healthy Peanut Butter Cookies
3 min readIntroduction
These healthy Peanut Butter Cookies are one of our favorite recipes. They’re simple and easy to make, but they also taste so good that you’ll never believe they’re gluten-free, vegan friendly and have less than half the sugar of regular cookies!
High in protein
One of the reasons we love peanut butter so much is that it’s high in protein. This means you can eat it as a snack, or even just have one or two slices with a glass of milk. If you’re looking for something to keep your energy up throughout the day, this cookie will do the trick!
There are two different types of sugar that make up a lot of our favorite sweets: glucose and fructose. Glucose is found in most fruits and veggies–it’s what gives them their natural sweetness and makes them good for us! Fructose is used to sweeten things like soda pop (which isn’t great for your health), so why would we want any more than what we already have? The answer is simple: because there’s no reason not to have more fruit on hand during these cold winter months when fresh produce isn’t always available at every corner store around town–or even just down your block!
Low in sugar
These cookies are low in sugar. Only 2 tablespoons of sugar are used, and they’re naturally sweetened by the peanut butter and banana. No refined sugar or artificial sweeteners have been added to these cookies–just good-for-you ingredients that are delicious!
Gluten free and vegan friendly
- Gluten free and vegan friendly
- Can be made with almond flour
- Can be made with oat flour
- Can be made with coconut oil, maple syrup, honey or other sweeteners
Made with whole ingredients
These cookies are made with whole food ingredients. They’re not refined sugar or flour, and they don’t contain any artificial sweeteners like Splenda or aspartame. Instead of using processed peanut butter (which can be high in sodium), I recommend using natural peanut butter that has been roasted for at least two hours. The longer you roast it, the more flavor it will retain–and the less likely your cookies will taste bitter!
A healthy cookie that tastes great
These cookies are:
- Healthy. The peanut butter and flaxseeds are two great sources of protein, which means they’ll keep you fuller longer.
- Delicious. These cookies have a rich peanut butter flavor without being too salty or heavy on the sugar, so they’re easy to eat with a glass of milk or your favorite smoothie in the afternoon. Plus, if you’re vegan or gluten-free (or both!), these are an excellent choice for those diets!
Conclusion
If you’re looking for a healthy alternative to your favorite cookie, these are it! They taste great, are easy to make and will keep you satisfied all day long.
